Marinated
sardines

1 kg. (2 lbs) fresh boned sardines

8 garlic
cloves

3 dl. (9 fl oz) olive oil

3 dl. (9 fl oz) white wine vinegar

a
pinch of salt

a
small sprig of fresh mint
In a bowl, prepare the marinade by beating together the
oil, the vinegar, the sliced garlic, salt and mint leaves. Put
a layer of sardines in a glass dish and cover with the marinade. Keep
adding layers of sardines, alternating with the marinade until you have
used up all the ingredients. Put
in the fridge and leave to rest for 24 hours before serving. |
